Is it because usually players in the outfield are not known for their defense, so that’s why they’re outfielders…? And offense is all they’re really known for?

Corner outfield spots
are just spots in your lineup that you count on power out of. Same with 1B and 3B. CF, 2B and SS are generally played by the more defensive-minded players who may provide you with more speed and hit for a higher average.
